Livestock and Lairage
Receives, identifies, rests and presents livestock for slaughter in a way that protects animal welfare, meat quality and traceability. The team checks National Vendor Declarations, reads electronic identification, manages water and pen density and works with the on-plant veterinarian on ante-mortem inspection.
What the team is accountable for
- Unload and pen livestock according to species, consignment and fitness
- Verify National Vendor Declarations and electronic identification against the consignment
- Maintain water, shade, pen density and curfew records
- Present animals calmly to the knocking box and race
- Report welfare concerns and suspect disease to the veterinarian immediately

Dale grew up on a Riverina cattle property and has managed lairage, animal welfare and livestock traceability at the plant for nine years.
Ellie Fraser
Ellie unloads and pens livestock, reads electronic identification and is one of the plant's trained animal welfare officers, now in her fifth year.

Livestock Receivals Register
Records every consignment of livestock received at the plant, its documentation, identification reconciliation, penning and lairage status.
Incident and Hazard Register
The plant register of injuries, near misses, hazards and animal welfare events, with investigation status and corrective actions.
