The situation

What has happened

For the first time you will run the boning room pre-operational hygiene inspection on your own, starting at 4 am on Thursday. The cleaning contractor signs off at 3:45 am. On Monday the underside of conveyor 3 and whizard station 6 failed and had to be re-cleaned, and the Quality Assurance Manager wants those areas checked closely and a swab taken. Every observation must be in the QA monitoring log before 5:15 am because the on-plant veterinary officer reviews the records at 7 am as part of daily verification. If any item fails on re-inspection you must call the Quality Assurance Manager before releasing the room. Boning starts at 5:30 am and a late start costs the plant a great deal.

Your brief. Conduct the pre-operational inspection following the procedure, record every observation, manage any failures through re-cleaning and re-inspection, take verification swabs and release the room or escalate correctly.

What to look for

Evidence guide

The inspection must follow the sequence from product contact surfaces outward. Fails must be tagged, re-cleaned and re-inspected before release and the log must show times that fit before 5:15 am. The repeat failure must result in a Non-Conformance Report with a genuine root cause. Escalation must go to the Quality Assurance Manager, not the boning room manager, where a fail cannot be cleared.
